Cranberry Apple Sweet Potatoes
- 2 medium sweet potatoes
- ½ - ¾ cup fresh cranberries, washed
- 1 apple, diced into small pieces (1/4 to ½ inch pieces work well)
- 1-2 tablespoons brown sugar
- 1 tablespoon cinnamon
- Dash of nutmeg
- 2-3 tablespoons of water
Wash, peel, then boil the sweet potatoes until tender enough to mash. Drain and mash. Set aside.
Put the remaining ingredients in a small saucepan. Bring to gentle boil and simmer until the cranberries are tender. Add more cinnamon, nutmeg, and/or brown sugar to taste. Use a potato masher to gently mash the cranberries as they soften to break them apart. Boil until most of the water is gone and the remaining liquid has thickened to a syrup-like texture. Remove from heat and swirl the cranberry apple mixture through the mashed sweet potatoes. Serve hot or cold.
