Crock Pot Fajita Chicken
4 boneless, skinless chicken breasts
2 tsp cumin
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp red pepper flakes
Freshly ground black pepper
3 bell peppers, thinly sliced
1 onion, thinly sliced
1 (14-oz.) can diced tomatoes, drained
- Place chicken in slow-cooker and season with cumin, chili powder, garlic powder, red pepper flakes, salt and pepper. Top with bell peppers, onions, and diced tomatoes.
- Cook on low 4-6 hours, or until chicken is cooked through (165 degrees fahrenheit).
- Remove chicken from slow-cooker and slice into strips. Use a slotted spoon to remove peppers, onions, and tomatoes. Place on a plate with sliced chicken. Discard liquid.
- Serve fajitas in a bowl or wrap with desired toppings.
